INGREDIENTS
  • 100g bacon (cut into thin strips)
  • 50g dried scallops (steamed & shredded)
  • 70g dried shrimp (soaked & minced)
  • 80g garlic (peeled & minced)
  • 100g shallots (peeled & minced)
  • 2 bird's-eye chili (deseed & minced)
SEASONINGS
  • 4g chili powder
  • 40g sambal prawn
  • 10g MSG
  • 20g sugar
INSTRUCTIONS
  1. Set the pot to Stir-Fry mode / 170° / 10 mins. Add the dried shrimp and fry until fragrant, crispy, and lightly golden. Remove and set aside.
  2. Set the pot to Stir-Fry mode / 230° / 5 mins. Add 400ml of oil and heat it for 3 mins. Add the shredded scallops and fry until golden (about 1-2 mins). Remove, drain and set aside.
  3. Set the pot to Stir-Fry mode / 230° / 3 mins. Reheat the oil for 1 min, then add the bacon and fry until golden and crispy (about 1-2 mins). Remove, drain and set aside.
  4. Set the pot to Stir-Fry mode / 230° / 3 mins. Reheat the oil for 1 min, then add the minced garlic and fry until lightly golden (about 1-2 mins). Remove, drain and set aside.
  5. Set the pot to Stir-Fry mode / 230° / 3 mins. Reheat the oil for 1 min.  Add the minced shallots and fry until golden (about 1-2 mins). Remove, drain and set aside.
  6. Set the pot to Stir-Fry mode / 170° / 3 mins. Add 50ml of oil and the chopped bird's-eye chili and fry for 1 min. Add the chili powder, sambal prawn, sugar, and MSG, and continue stir-frying for another 1 min.
  7. Press the knob button to pause, add the fried shredded scallops, bacons, garlic and shallots. Stir-fry for another 30 sec.
  8. Turn off the cooking machine and use chopsticks to gently mix everything well.

做法
  1. 将锅设定为 Stir-Fry 模式 / 170° / 10 分钟。加入虾米,干炒至香气四溢、酥脆且微金黄。取出备用。
  2. 将锅设定为 Stir-Fry 模式 / 230° / 5 分钟。倒入 400 毫升油,加热 3 分钟。加入干贝丝,炒至金黄色(约 1–2 分钟)。取出,沥干油分,备用。
  3. 将锅设定为 Stir-Fry 模式 / 230° / 3 分钟。重新加热油 1 分钟,然后加入培根,炒至金黄酥脆(约 1–2 分钟)。取出,沥干油分,备用。
  4. 将锅设定为 Stir-Fry 模式 / 230° / 3 分钟。重新加热油 1 分钟,然后加入蒜末,炒至微金黄(约 1–2 分钟)。取出,沥干油分,备用。
  5. 将锅设定为 Stir-Fry 模式 / 230° / 3 分钟。重新加热油 1 分钟,加入小葱头碎,炒至金黄色(约 1–2 分钟)。取出,沥干油分,备用。
  6. 将锅设定为 Stir-Fry 模式 / 170° / 3 分钟。加入 50 毫升油和小辣椒碎,炒 1 分钟。加入辣椒粉、叁巴虾酱、糖和味精,再炒 1 分钟。
  7. 按下旋钮按钮暂停,加入先前炒好的干贝丝、培根、蒜末和小葱头碎,继续炒 30 秒。
  8. 关闭炒菜机,用筷子轻轻拌匀所有材料。
